Dabboo Dal Seb Walon Ki Dukaan was started in 1981 and has grown through three generations – first run by grandfather Ramesh Chandra Agarwal, then by his father Satendra Agarwal, and then by his uncle Ajay Agarwal. Dhokla preparation process
Firstly, a paste is prepared by mixing pure gram flour with water, in which baking soda, salt, baking powder, green chillies, green coriander, ginger etc. are added. After this the mixture is mixed well and it is kept in a warm place for 6 to 7 hours. Then half of the water is poured in a big vessel and it is heated on the gas. During this, the dhokla is uncovered by placing a plate of dhokla in the utensil and is steamed for 45 minutes. After this the dhokla is taken out and cut with a knife and decorated with mustard seeds, sesame seeds, curry leaves, asafoetida and green chillies.
